Ingredients
- 2 (8 oz) pkgs low fat cream cheese
- 1 (8 oz) can crushed pineapple, drained
- 1 ¼ cup pecans, chopped
- ¼ cup green bell pepper, chopped
- 2 T onion, chopped
- 1 T Tony Cachere’s
- *1 bag craisins
- *1 cup pistachio nuts
Preparation
Step 1
Soften cream cheese, stir in drained pineapple, add 1 ¼ cups nuts, bell pepper, onions and Tony Chachere’s and stir until thoroughly blended.
Cover and chill 4-6 hours or overnight.
Mix craisins and pistachios together and set aside.
Roll cheese mixture into ball, then roll in craisin/nut mixture.
Serve with Ritz, or crackers of your choice.
* May substitute Harvest Trail Mix during the fall, or just chopped pecans.
