Ingredients
- 1 cup orzo
- 2 tbsp olive oil
- 1 medium carrot, diced
- 1 small onion, diced
- 1 small zucchini, diced
- 1/4 tsp salt
- 1/4 tsp dried oregano
- 2 tbsp grated parmesan cheese
- 2 tbsp pine nuts, toasted (optional)
Preparation
Step 1
Prepare orzo according to package directions. Meanwhile, heat oil in medium saucepan over medium-high heat. Add carrot, onion, zucchini, salt and oregano; saute for 3-5 minutes, or until vegetables are tender-crisp, stirring occasionally. Drain orzo; stir orzo and cheese into vegetables. Spoon mixture into serving bowl; sprinkle with pine nuts if using.
