Butternut Squash Mash

Ingredients

  • 1/2 c mayo
  • 1/2 c chopped onion
  • 1 egg beaten
  • 1 tsp brown sugar
  • salt/pepper
  • 1/4 c saltines crushed
  • 2 tbsp parmesan cheese
  • 1 tbsp butter melted

Preparation

Step 1

Preheat oven 350

In saucepan bring water to boil add squash and simmer until soft.

In a large bowl mash squash, add mayo, onion, egg, sugar, s&p

Pour into 2qt dish

In a small bowl combine crackers, parmesan cheese and butter, sprinkle over squash

Bake umcovered 35-45 minutes until brown
