Ingredients
- 1/2 package taco seasoning
- 2 to 2 1/2 lbs boneless pork shoulder, trimmed (or I use Pork Tenderloin (a two pack)
- 1/2 c. apricot jam or preserves
- 1/3 c. brown sugar
- 4 T. freshly squeezed orange juice
- 4 cloves garlic, minced
- 3 fresh jalapenos, sliced into long skinny strips
- 2 red onion, sliced
- small flour or corn tortillas, warmed
- 1 c. coarsely chopped fresh cilantro
- 2 limes, cut into wedges
- FRESH PICO D'GALLO
