Lone Star pork Tacos

Ingredients

  • 1/2 package taco seasoning
  • 2 to 2 1/2 lbs boneless pork shoulder, trimmed (or I use Pork Tenderloin (a two pack)
  • 1/2 c. apricot jam or preserves
  • 1/3 c. brown sugar
  • 4 T. freshly squeezed orange juice
  • 4 cloves garlic, minced
  • 3 fresh jalapenos, sliced into long skinny strips
  • 2 red onion, sliced
  • small flour or corn tortillas, warmed
  • 1 c. coarsely chopped fresh cilantro
  • 2 limes, cut into wedges
  • FRESH PICO D'GALLO
