Ingredients
- 1 head cauliflower, stem removed
- 2 tablespoons butter, softened
- 1/4 cup extra virgin olive oil
- 1/2 cup parmesan cheese, shredded
- salt
- pepper
Preparation
Step 1
1. Bring medium saucepan of salted water to a rolling boil. Add cauliflower and cook until very tender.
2. Drain water and place cauliflower in bowl of stand mixer. Smash cauliflower on medium speed and add in the butter and drizzle in the olive oil.
3. Add the cheese and season with salt and pepper. Serve immediately.
