Artichoke-Rice Salad

Ingredients

  • 1 box chicken-flavor Rice-A-Roni, prepared without butter
  • 4 green onions, chopped
  • 1/2 green pepper, chopped
  • 12 pimento olives, sliced
  • 2 (6 oz.) jars marinated artichoke hearts (Caramia brand), drain 1, reserve marinade of other
  • 1 (8 oz.) can sliced water chestnuts
  • 1/3 c. mayonnaise
  • 1/2 tsp. curry powder
  • Lemon juice, to taste

Preparation

Step 1

Cook rice; cool. Add vegetables. Mix together mayonnaise, curry, lemon juice and marinade from artichokes. Combine rice/vegetables with dressing. Stir in nuts (toasted almonds or cashews) at last minute for more crunch. Chill several hours to blend flavors. Yield: 4 to 6 servings.
