Carrot Cake

Moist and delicious, this carrot cake recipe will become your favorite. A little tang from the pineapple, and the coconut and nuts and little spice from cinnamon, this is a perfect carrot cake.

Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 3 eggs
  • 1 1/2 cup canola oil
  • 2 cups finely grated carrots
  • 1 teaspoon vanilla
  • 1 cup well drained crushed pineapple
  • 1 cup shredded coconut
  • 1 cup chopped walnuts

Preparation

Step 1

Preheat oven to 350°F.

Combine flour, sugar, salt, soda, and cinnamon together in a large bowl.

In a separate bowl, combine eggs, oil, and vanilla together and beat very well. Mix in the dry ingredients and carrots, blend well.

Add pineapple, coconut, and walnuts to batter and mix well.

Pour into a 9x13 cake pan and cook for 20-22 minutes, or until a toothpick comes out clean.
