Mom's Macaroni and Cheese

Ingredients

  • 12 oz. uncooked elbo macaroni
  • 7 Tbsp. butter divided
  • 6 Tbsp. all purpose flour
  • 3 cups milk
  • 1 1/2 teasp. salt
  • 1 teasp. dry mustard
  • 1/4 teasp. pepper
  • 1 1/2 cups shredded Cheddar cheese
  • 1 1/2 cups shredded Swiss cheese
  • 1/2 teasp. minced garlic
  • 3 Tbsp. plain dry bread crumbs
  • 1 Tbsp. chopped fresh parsley

Preparation

Step 1

Preheat oven to 350 degrees
Grease deep 2 1/2 qt. casserole
Cook macaroni in plenty of boiling water just until tender about 5 mins. and drain.

Melt 6 Tbsp. butter in large saucepan over med. heat. Whisk in flour and cook for 1 min.

Gradually whisk in milk, then add salt, mustard and pepper. Cook stirring constantly until thickened and just beginning to boil.

Reduce heat and simmer for 5 mins. Remove from heat. Add cheeses and stir until melted. Stir in macaroni and transfer to prepared casserole.

Melt remaining tablespoon butter in small skillet over med. heat. Add garlic and cook 30 seconds. Add bread crumbs and cook stirring constantly until lightly browned. Stir in parsley. Sprinkle crumb mixture over macaroniBake 20-25 mins until cheeses are bubbly. Let stand 5 mins. before serving. Makes 8 servings.
