Ingredients
- 1 can black beans, rinsed and drained
- 1 cup uncooked frozen corn kernels
- 1 large tomato, diced
- 1 small red onion, diced
- 1 Tbsp. minced cilantro
- 1 tsp. minced garlic
- 2 Tbsp. white vinegar
- 1/4 olive oil
- 1 tsp. chili pepper
- 1/4 tsp. ground cumin
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/4 tsp. black pepper
Preparation
Step 1
Put beans, corn, tomato, onion and cilantro in large bowl and stir gently.
Place vinegar, olive oil, garlic, chili powder, cumin, sugar, salt and pepper in small bowl and shisk to combine. Pour dressing over bean mixture and toss to coat. This salad can be kept at room temp up to 6 hrs.
