Tomato and Spinach Soup

Ingredients

  • 2 Tbsp olive oil
  • 1 large shallot, finely chopped
  • 2 cloves of garlic, chopped
  • 1 can diced tomatoes in juice, drained
  • 1 can crushed tomatoes (28 ounces)
  • 2 cups good quality vegetable stock
  • 1/2 of a 10 ounce sack spinach, stems removed and shredded with a knife
  • salt and pepper, to taste

Preparation

Step 1

Heat a medium soup pot over moderate heat. Add olive oil, shallot, and garlic. Saute 5 minutes. Add tomatoes (diced and crushed) and stir. Add stock. Stir in spinach to wilt and combine with soup. Season to taste.

Bring soup to a boil, reduce heat and simmer 10-15 minutes to reduce.
