Tomato and Spinach Soup

Ingredients
- 2 Tbsp olive oil
- 1 large shallot, finely chopped
- 2 cloves of garlic, chopped
- 1 can diced tomatoes in juice, drained
- 1 can crushed tomatoes (28 ounces)
- 2 cups good quality vegetable stock
- 1/2 of a 10 ounce sack spinach, stems removed and shredded with a knife
- salt and pepper, to taste

Step 1
Heat a medium soup pot over moderate heat. Add olive oil, shallot, and garlic. Saute 5 minutes. Add tomatoes (diced and crushed) and stir. Add stock. Stir in spinach to wilt and combine with soup. Season to taste.
Bring soup to a boil, reduce heat and simmer 10-15 minutes to reduce.
