Bananas Foster

Ingredients

  • 1/4 c (1/2 stick) unsalted butter
  • 1 c packed light brown sugar
  • 1/2 tsp ground cinnamon
  • 4 ripe bananas, peeled and sliced
  • 1/4 c banana liquer
  • 1/4 c dark rum
  • 1 pint vanilla ice cream

Preparation

Step 1

Combine the butter, sugar and cinnamon in a flambe pan or skillet. Place pan over low heat either on an alcohol burner or on top of the stove and cook, stirring until the sugar dissolves. Stir in banana liquer, then place the bananas in the pan. When the bananas soften and begin to brown, carefully add th rum. Continue to cook the sauce until the rum is hot, then tip the pan slightly to ignite the rum.

Divide the ice cream among 4 dessert plates. Gently lift the bananas from the pan and place on the ice cream. Spoon the sauce over the ice cream and serve immediately.
