Tomato Dressing

Serve with Turkey Tenderloin with Balsamic Sauce. This is a summertime Thanksgiving meal.
Make sure bagette is staled.

Ingredients
- 1 3/4 c low-sodium chicken broth
- 1/2 heavy cream
- 2 eggs
- 5 c baguette cubes, staled (1 inch pieces)
- 3 c halved cherry tomatoes
- 10 oz fresh mozzarella, diced1 c grated parmesan cheese, divided
- 1/2 c thinly sliced fresh basil
Preparation
Step 1
Preheat oven to 400 degrees.
Coat 2 quart baking dish with nonstick spray.
Whisk together broth, cream and egges in large bowl. Add bread cubes, toss to coat, then let stand until bread is saturated, about 10 minutes.
Stir in tomatoes, mozzarella, 1/2 c parmesan, basil. Spoon mixture into prepared dish and sprinkle with remaining Parmesan. Bake until dressing is bubbly and toasted on top, 30-35 minutes. Let stand 10 mins before serving
