Ingredients
- ½ box whole wheat pasta
- 1 Tbsp olive oil
- 12 oz ground chicken
- 3 garlic cloves, minced
- 10 oz spinach - 1 bunch, cleaned and chopped
- 4 oz roasted red pepper, sliced
- Salt & pepper
- 4 oz partially skim mozzarella, shredded
- 1 oz parmesan cheese, shredded
- Hot pepper flakes
Preparation
Step 1
Cook pasta according to directions. While pasta is cooking, heat oil over medium heat in large sauté pan. Sauté chicken until most of the pink is gone, about seven minutes. Add garlic, sauté one minute, add spinach and red peppers. Add salt and pepper. Combine well. Strain pasta and put back into previous pot. Add chicken mixture and mix until well incorporated. Add in both cheeses and a shake of hot pepper flakes.
