Ingredients
- 1 small orange
- 2/3 c cinnamon applesauce
- 1/4 c balsamic vinegar
- 1/2 t ground cardamom or 1/4 t nutmeg
- 1 lb chicken tenders
- 2 t vegetable oit
Preparation
Step 1
finely shred peel from orange set aside.. Juice orange. in med saucepan combine applesauce, vinegar, cardamom, juice from the orange and 1/2 t each s & p.
bring to boiling. Reduce heat and cook 10 min.
Season chicken lightlly w/s&p. Heat oil in 12 in.non stick skillet. Add chicken, cook until golden brown on bottom. Turn chicken and add 1/2 c applesauce mix. to skillet. Cook 2-3 min
To serve, top chickebn with some of the applesauce mix, orange peel. Use extra mix.
