Tomato Bisque Soup

Ingredients

  • 2 Tbsp. oil
  • 1 cup chopped onions
  • 1/2 cup chopped celery
  • 1/2 - 2 tsp. fresh basil
  • 1/2 - 2 tsp. dill
  • 1/2 tsp. garlic salt
  • 2 cup chopped fresh tomatoes (1 - 28 oz can diced tomatoes, drained)
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • Pepper to taste
  • 2 cups chicken stock
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups milk (half & half)

Preparation

Step 1

In large pot heat oil and cook onion, celery, and herbs. Add tomatoes, salt & pepper. Cover and simmer 10 minutes. Add chicken stock. Cook uncovered for another 20 minutes.

For smoother soup, blend or puree this mixture in blender.

Meanwhile, in a saucepan:
Melt 1/4 cup butter, blend 1/4 cup flour. Add 2 cups milk. Cook over medium heat, stirring constantly until thick. Whisk white sauce into tomatoe sauce. (Kae adds grated Parmesan cheese on top. Can also add croutons on top).
