creamy potato soup

Ingredients

  • 5 Medium MountainKing® Russet Potatoes
  • 2 Tablespoons butter
  • 1 cup half & half
  • 1/2 teaspoon fresh dill
  • 1 teaspoon salt

Preparation

Step 1

1. Peel potatoes and cut into 1/2 inch dice.
2. Place in saucepan and cover with water. Add salt and boil until tender about 10 minutes.
3. Strain and return to saucepan.
4. Add half and half and heat near boiling. Add butter and dill. Using a potato masher, crush half of the potatoes for a thicker soup.
5. Simmer 5 minutes on low.
