Artichoke Frittata (WB)

Ingredients

  • 2 6oz jars marinated art hearts, drained, chopped.
  • Keep 2T marinade, discard rest.
  • 8oz chopped onion
  • 1T minced garlic>>stir with reserved marinade 5 min,
  • in a 10-12" nonstick ovenproof frying pan.
  • 6 large eggs
  • 1/4 c fine dried bread crumbs
  • 1/2t hot sauce
  • 1/4t pepper
  • 1/4t dried oregano
  • 2 c shredded cheddar>>>>whisk together.
  • Stir in artichokes.
  • Pour into pan w/ onions & garlic.
  • 1/4 c shredded parmesan>>Sprinkle over.

Preparation

Step 1

Bake at 350 til center is set & top is lightly browned,
about 30 min

Serve warm or at room temp.
Cut into 12 wedges.
