Ingredients
- 2 eggs
- 1 c sugar
- 1/4 c oil
- 1/2 c yogurt or buttermilk
- 1 tsp vanilla
- 1 3/4 c finely chopped rhubarb
- 2 c flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 ts cinnamon
Preparation
Step 1
Mix the first 6 ingredients together in a large bowl
Add the dry ingredients
Mix just until moistened
Bake in muffin cups at 375 F for 25 min
