Italian Zucchini Quiche

A crustless Italian zucchini quiche is the perfect Sunday breakfast or brunch to kick off a great day!

Ingredients
- 1 cup zucchini, thinly sliced
- 5 green onions, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 teaspoon Morton Lite Salt
- 1/8 teaspoon dried whole basil
- 1/8 teaspoon dried whole oregano
- 2 or 3 eggs (according to plan), beaten
- 2 ounces reduced-fat Monterey Jack cheese
Preparation
Step 1
Preheat oven to 375°F. Spray skillet with Pam.
Saute zucchini and onion until tender.
Stir in parsley, salt, garlic powder, basil, and oregano.
Combine eggs and cheese. Combine egg and cheese mixture with sauteed vegetables.
Spray baking dish with Pam. Pour mixture into pan.
Bake at 375°F for 20 minutes or until set.
