Ingredients
- Vegetable cooking spray
- ¼ c graham cracker crumbs
- 2 – 8 oz packages fat free cream cheese (not in a tub)
- 1 – 14 oz Eagle brand fat free sweetened condensed milk (not evaporated)
- 4 egg whites
- 1 egg
- ½ c real lemon juice from concentrate
- 1 tsp vanilla extract
- ¼ c sifted flour
- 1 c fresh assorted fruit
Preparation
Step 1
Preheat oven to 300. Spray bottom of 8 inch springform pan with cooking spray; sprinkle crumbs on bottom of pan.
In mixer bowl, beat cheese until fluffly.
Gradually beat in sweetened condensed milk until smooth.
Add egg whites, egg, lemon juice, and vanilla. Mix well.
Stir in flour.
Pour into prepared pan.
Bake 45 – 50 minutes or until center is set.
Cool. Chill. Serve with fruit. Refrigerate leftovers.
