Ingredients
- 1 onion, chopped
- 2 T. vegetable oil
- 14.5 oz. can whole peeled
- tomatoes, drained and
- chopped
- 4 oz. can green chiles, drained
- 10 oz. pkg. frozen spinach,
- thawed and drained
- 10 oz. Monterey Jack cheese
- 8 oz. pkg. cream cheese,
- softened
- 1 cup half-and-half
- 1 T. red wine vinegar
- salt and pepper to taste
Preparation
Step 1
Saute onion in skillet over medium heat in oil until soft. Stir in tomatoes and chiles and cook additional 2 minutes. Transfer to bowl and mix remaining ingredients. Season with salt and pepper. Spoon into shallow baking dish and bake 30-35 minutes in 400 degree oven until bubbly and top is light brown.
