Linguini with tomatoes, basil, garlic and olive oil

Ingredients

  • 1/2 package whole wheat linguini
  • 2 oz good quality extra virgin olive oil
  • 8 cloves of garlic thinly sliced
  • 1 bunch of fresh basil thinly sliced
  • 6 ripe roma tomatoes roughly chopped
  • 1/2 tsp crushed red pepper
  • 1 tsp kosher salt
  • 1 tsp fresh ground pepper

Preparation

Step 1

Bring salted water to a boil and cook the linguini for 8 - 10 minutes or until al-dente. Strain, rinse and set aside.

In a hot saute pan add oil, garlic and crushed red pepper, cook until garlic is slightly brown being careful ot to over brown.

immediately add tomatoes and cook for a few more minutes

add basil, salt and pepper and toss with pasta

serve immediately
