Pumpkin Pancakes (Paleo)

Ingredients

  • 2 c. nut butter (almond butter today)
  • 2 c. cooked pumpkin/winter squash/carrots (i used canned pumpking today; i've used fresh roasted squash and carrots too)
  • 10 eggs
  • 1 tsp vanilla
  • 1 tsp cinnamon

Preparation

Step 1

blend ingredients together
Cook in coconut oil/ghee/butter on a 300 degree griddle
