Ingredients
- 1 ½ C. Cranberries
- 2 C. Flour
- ½ C. Cake Flour
- 2 tsp. Baking Powder
- 1 tsp. Ground Ginger
- ½ tsp. Baking Soda
- ½ tsp. Salt
- 10 tbsp. Butter (softened)
- ¾ C. Sugar
- 2 Eggs
- 1 ½ tsp. Orange Zest
- 1 tsp. Vanilla
- 1 C. Butter Milk
- ½ C. Orange Juice
Preparation
Step 1

*Butter muffin tin and dust with flour
Mix flour, cake flour, baking powder, ginger, baking soda, and salt. Then Blend butter and sugar until fluffy. Beat eggs, orange zest and vanilla. Alternate beating in 1/3 flour mixture and ½ cup butter milk. Then add orange juice and beat. Fold in cranberries into batter with spatula.
Fill muffin tins quite full. Sprinkle sugar on top and bake.
