Alicia's Rosemary and White Bean Pasta

Ingredients

  • 1 1/4 cups pasta
  • 1 cup halved grape tomatoes
  • 12 pimento stuffed olives, chopped
  • 3 TBSP pine nuts, toasted
  • 1 tsp chopped fresh rosemary
  • 1 garlic clove minced
  • 1/4 tsp salt, divided
  • 1 can navy beans, undrained
  • 1 cup packed baby spinach, coarsely chopped
  • 1/3 cup feta cheese
  • 2 tsp EVOO

Preparation

Step 1

Cook pasta and drain.
toast pine nuts ans set aside
saute EVOO and garlic for a few minutes.
Add beans, spinach, olives and rosemary and cook for a few minutes, until hot
Quickly toss the remaining ingredients over the heat and add pasta. Cook until warm.
