Tomato Pie

Ingredients

  • 1 pie crust
  • 4 very ripe medium tomatoes
  • 1/2 medium onion
  • 3/4 cup shredded cheddar cheese
  • 3/4 cup shredded Mozarella cheese
  • 3 slices bacon, cooked and crumbled
  • 3 TBSP mayonnaise
  • 1 tsp. basil, divided
  • salt & pepper to taste

Preparation

Step 1

Core tomatoes and cut in half through the middle. Scoop out seeds and slice. Place in a colander over sink and sprinkle with salt and pepper. Allow to drain while preparing other ingredients. Preheat oven to 425*.
Slice onion very thinly.
Combine cheese, bacon and mayo and mix thoroughly.
Arrange a layer of tomatoes on crust, sprinkle with 1/2 of the onion and 1/2 tsp. basil. Repeat layers.
Top with cheese mixture. Can add crust over top if desired.
Bake 40-45 minutes, checking after 30 minutes. Cover with foil last 10-15 minutes to avoid overbrowning.
Allow to cool 15-20 minutes before cutting.
