Ingredients
- 2/3c chopped plum tomato
- 1/4c shredded mozzarella
- 1/2t EVOO
- 1/2t finely chopped fresh or 1/8t dried
- 1/8 t pepper
- 1 garlic clove, crushed>>combine
- 4 portobello caps, discard gills.
- 2T fresh lemon juice
- 2t soy sauce
- 1/2t EVOO>>>>>>combine & brush over both sides of
- mushrooms
- Grill mushrooms 5 min on ea side (spray grill w/Pam)
- Spoon 1/4 c tomato mixture into ea cap.
- Cover & grill 3 min or til cheese is melted.
- 2t minced fresh parsley>>sprinkle over.
