Ingredients

  • 2/3c chopped plum tomato
  • 1/4c shredded mozzarella
  • 1/2t EVOO
  • 1/2t finely chopped fresh or 1/8t dried
  • 1/8 t pepper
  • 1 garlic clove, crushed>>combine
  • 4 portobello caps, discard gills.
  • 2T fresh lemon juice
  • 2t soy sauce
  • 1/2t EVOO>>>>>>combine & brush over both sides of
  • mushrooms
  • Grill mushrooms 5 min on ea side (spray grill w/Pam)
  • Spoon 1/4 c tomato mixture into ea cap.
  • Cover & grill 3 min or til cheese is melted.
  • 2t minced fresh parsley>>sprinkle over.
