Tomato Chicken Stack Salad

Ingredients

  • 12-15 fresh basil leaves sliced
  • 2 tbsp. of fresh parsley chopped
  • 1 small shallot chopped
  • 4 large red and yellow tomatoes
  • 1 deli chilled rotisserie chicken
  • 2 tbsp. white balsamic vinegar
  • 1/3 extra virgin olive oil
  • 1/2 tsp. of dried italian seasoning
  • 1/4 tsp. of pepper
  • 1/2 cup of crumbled feta, goat or blue cheese

Preparation

Step 1

Prep:
Slice basil, chop parsley and shallot. Cut tomatoes. Remove meat of chicken from bones and chop.

Steps: Prepare dressing whisking vinager, oil, seasoning, pepper and parsley, and shallots until blended.

Arrange salad on plates. Drizzle and serve
