Pork Chops Modenese

Ingredients

  • Olive oil or canola oil
  • 4 pork chops (about 3/4" thick)
  • 10-15 fres sage leaves (use to taste)
  • 1 1/2 cand diced tomatoes
  • Salt and Pepper

Preparation

Step 1

Brown chops on one side in hot oil; turn and add sage leaves. When both sides are browned, season with salt and pepper and add tomatoes. Cover and cook over medium-low heat until tender. You may need to take off cover to cook tomatoes down if they become watery--the sauce should be somewhat thick.
Serve with egg noodles or rice.
