Pineapple Upside-Down Gingerbread

Ingredients

  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 1/3 cup cherry halves
  • 6 drained pineapple slices
  • 1 pkg gingerbread mix

Preparation

Step 1

Heat oven to 350 degrees. Melt butter in 9" round or square pan. Blend in sugar. Spread in pan; sprinkle with cherry halves. Arrange pineapple slices over bottom of pan. Make batter as directed on gingerbread box. Pour over fruit and bake for 40-45 minutes. Let cake stand a few minutes before inverting onto serving plate. Serve warm with dollop of whipped topping if desired.
