Creamed Onions

Ingredients

  • 1 lb baby onions
  • 1 lb sliced mushrooms
  • 1 stick unsalted butter
  • 2 tbl cornstarch
  • 1 cup cream
  • 2 cups milk
  • 1 cup monteray jack cheese
  • 1/4 tsp nutmeg
  • 1/2 tsp tarragon
  • salt
  • white pepper
  • bread crumbs

Preparation

Step 1

Boil baby onions, set aside water boiled in
Saute one pound of sliced mushrooms

In a sauce pan melt one stick of butter. Add slowly 2 tablespoons of cornstarch.
Slowly add 1 cup cream and 2 cups of milk. Very slowly. So its thick all the time. Over low heat, when sauce is thick add one cup of monteray jack cheese. Then add 1/4 tsp of nutmeg, 1/2 tsp of tarragon, salt and white pepper. Add in the saute mushrooms.
Put onions in a caserole dish, pour cheese sauce over the onions. Sprinkle with parmesan cheese and bread crumbs on top.

Bake at 350 for 30 minutes or until bubbly.
