Pasta Carbonara

Ingredients

  • 8 oz linguine or spaghetti
  • 8 strips bacon, diced
  • 8 oz sliced fresh mushrooms
  • ½ c diced onion
  • 3 egg yolks, lightly beaten
  • 1 can crushed tomatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 cup grated Parmesan

Preparation

Step 1

Fry the bacon in a large skillet over medium heat.

Cook the pasta according to package.

Transfer to a paper towel and reserve 3 tablespoons of drippings. Add onions and mushrooms, sauté 3 minutes on medium high heat. Add the crushed tomatoes, basil and oregano. Heat till warmed.

When pasta is done, drain and immediately toss the pasta with the egg yolks. Then add the cheese and the veggies mix. Crumbles the bacon on top and toss. Serve immediately.
