Baked Potato Soup-Donna Jones

Ingredients

  • 4 Large Baked potatoes cut into 1/2 inch cubes
  • 2/3 c. margarine
  • 2/3 c. flour
  • 6 c. milk
  • 3/4 ts. Salt
  • 1/2 ts. Pepper
  • 4 green onion, finely chopped
  • 12 slices bacon, cook crisp
  • 1 1/2 c. cheddar cheese – shredded
  • 8 oz. Sour cream
  • 1 heaping teaspoon chicken base.

Preparation

Step 1

In a large pot melt margarine, add flour – stir. Add milk, salt, pepper and green onion, bring to a simmer. Add potatoes, bacon, cheese, sour cream and chicken base. Cook over medium heat, stirring often. Makes approximately 10 cups.
