Ingredients
- asparagus spears 1 1/2 pounds , trimmed 4 -5 inch long
- olive oil, extra virgin , for drizzling
- ground black pepper
- bacon 4 slices center cut , or pancetta
- chives chopped or scallions, optional garnish
Preparation
Step 1
Preheat oven to 400°
Lightly coat asparagus spears in extra-virgin olive oil.
Season the asparagus with black pepper.
Take a quick count and divide the tips into fourths,
Gather the bundle and using a slice of bacon or pancetta, wrap a bundle of asparagus together.
Repeat with the remaining bundles.
Place the bundles on a slotted broiler pan, and back for 12 minutes.
