Ingredients
- 1 lb hamburger
- 1 tsp salt
- 1/4 tsp pepper
- 1 clove garlic mashed
- 2 1/2 - 3 lbs zucchini
- 1 can 4 oz chopped chilies
- 2 tblsp butter
- 1 cup shredded cheddar cheese
- 2 eggs
- 2 cup cottage cheese
- 2 tsp parsley
- 2 tblsp parmesan cheese
Preparation
Step 1
For the 1st layer cook hamburger, salt, pepper, and garlic, drain and spoon in a 2 qt dish. Cook zucchini in salt water till tender. Drain and add chilies, 2T butter and mash, then add over the hamburger layer. Sprinkle with cheddar cheese The Beat eggs until light, fold in cottage cheese & parsley. Spoon over squash. Sprinkle with parmesan cheese. Bake at 350 for 35-45 min or until set.
