Chicken with walnuts and spinach

Ingredients

  • 1/2 cup chopped onion
  • 1 cup walnuts chopped
  • 1 Tbsp olive oil
  • 1 cup baby spinach chopped
  • 1/2 grated provolone (mozarella)
  • 4 thin sliced boneless chicken breasts seasoned with salt and pepper

Preparation

Step 1

Heat oven to 375 degrees. In frying pan, cook onion in oil over medium low heat until softened about 5 minutes. Add 1/2 cup walnuts and cook 1 minute. Increase heat to medium. Add spinach and cook until wilted, 2 minutes. Put mixture in bowl and stir in cheese. Divide among chicken slices and roll to enclose. Spray chicken with oil and rull in remaining chopped walnuts. Bake on greased baking sheet 30-35 minutes.
