Ingredients
- 6 medium baking potatoes
- 2 1/2 C Cauliflower florets
- 3 Tbs butter
- 2 Tbs chicken broth
- 1 Tbs each chopped fresh chives and parsley
- 1 Tsp chopped fresh tarragon
- 1/8 Tsp granulated garlic
Preparation
Step 1
Heat oven to 350. Prick potatoes with fork. Bake 1 hr or until fork tender. Let cool 5 min. Halve Potatoes lengthwise, scoop out leaving 1/4" thick shell.
In saucepan of boiling salted water, cook cauliflower 4 min or until tender. Drain. Using hand masher, mash scooped-out potato flesh and cauliflower with butter, broth, fresh herbs and garlic, using additional broth if needed. Season with salt and pepper.
Heat broiler. Spoon mashed potato misture into pastry bag or plastic bag. Pipe potato miture into shells. Place filled potatoes on baking sheet. Broil 1 min or until golden brown.
