Ingredients
- 4 pounds Butternut or calabaza squash
- 1/3 c maple syrup
- zest and juice of a lemon
- 1/2 tsp red pepper flakes
- pinch of salt and pepper
- 4 Tbs butter
Preparation
Step 1
Slice the squash into thick wedges and remove seeds. Put cut-side up in a baking dish. Combine maple syrup, zest and juice of a lemon, red pepper flakes, salt and pepper, pour over squash and dot with butter. Bake 20 minutes at 350, then flip squash and bake until carmelized and tender, 45 minutes more, basting halfway through.
