Ingredients
- 1/2 c. Cidar vinegar ...or white wine. I like white wine
- 1/4 sugar. Optional
- 1 T kosher salt
- 1/2 t corse ground black pepper
- 4 ears corn .fresh uncooked soaked in ice water for 20 minutes
- 1/2 C. Cucumber seeded but not pealed
- 1/2 C. Red or orange pepper diced
- 1/2 C cherry tomatoes cut In halves
- 3 T parsley finely torned
- 1 T. Basil leaves pulled apart
- 1 Fresh jalapeño seeded and veined sliced diced red
- 1/2 t. Sea salt
- 1 c. Arugula leaves
Preparation
Step 1
For dressing wisk together vinegar, sugar, kosher salt and black pepper until sugar is dissolved. . Allowing dressing to stand while preparing salad.
For salad cut fresh uncooked corn from cob. In a large bowl toss corn and remaining ingredients except sea salt and arugula leaves
At serving time transfer corn mixture to bowl and add sea salt , add dressing , gently add arugula. .
Serve immediately
