Poached Shrimp - Shirley Holland

Ingredients

  • 8 cups water
  • 1/4 cup sliced onion
  • 1 clove garlic
  • 1 bay leaf
  • 2 celery ribs with leaves
  • 1 1/2 T salt
  • 2 pounds green shrimp

Preparation

Step 1

Slice and add 1/2 lemon to water. Add onion, garlic clove, bay leaf and celery and salt to water. Simmer the shrimp 3 minutes until pink, but not tightly curled. Drain immediately and chill.
