STEAMY SALMON CHOWDER

Step 1

In a large saucepan over medium heat saute 1 tsp olive oil and 1/2 c choped celery for about 10 minutes. Add one clove minced garlic and saute for one more minute. Add 1 (15 oz) can reduced sodium chicken borth, 2 1/2 c frozen country style hash browns with green pepper and onion, 1 c frozen peas and carrots, 1/2 tsp dill and fresh pepper and bring to a boil. REduce heat and simmer about 10 minutes until vegetables are done but not overcooked. Add 6 oz pouched or canned pink salmon (make sure bones removed). Stir in 1 (12 oz) can evaporated skim milk and 1 (14 3/4 oz) can no salt added cream style corn and cook until heated through.
