Tomato Soup

This thick,tangy & healthy tomato soup is simple, quick to prepare
& best enjoyed with toasted croutons.

Ingredients

  • 6 fresh tomatoes
  • 1 tbsp butter
  • 1 garlic clove
  • 1 tbsp sugar
  • 1 tsp black pepper
  • 1 tsp mint leaves chopped
  • Salt to taste

Preparation

Step 1

1. Boil 4 cups of water in pressure cooker & add tomatoes.

2. Cook on a medium flame for 5 minutes or for 2 whistles.

3. Allow steam to escape before opening lid & allow it to cool.

4. Blend into a smooth puree using a hand blender & strain.

5. Transfer soup in cooker or a deep pan & add salt, black pepper, sugar,
garlic clove & boil it again.

6. Add butter & mix well.

7. Garnished with mint leaves & Serve hot.
