Hazel's Potato Salad

Modified slightly from the original recipe. Changed 1 T. of sugar to 3 T. of sugar.

Ingredients

  • 1 1/2 qt. of potatoes (peeled and diced)
  • 7 eggs (boiled) 6 diced and put in the salad and 1 sliced for on top
  • 1 c. mayonnaise
  • 1/4 c. sweet pickles (minced)
  • 1 t. mustard
  • 1 T. minced onion or 1/4 c. diced onions
  • 3 T. sugar

Preparation

Step 1

Hard boil 7 eggs.

Boil potatoes on medium/high heat. When a rolling boil is achieved, boil for 10 minutes.

Dice 6 of the 7 eggs and slice the 7th for the top of the salad.

While waiting for the potatoes to boil, put diced eggs, mayonnaise, pickles, mustard, onion and sugar in a bowl. Add drained potatoes to this mixture. Stir until thoroughly mixed. Salt to taste.

Decorate the top with the 7th sliced egg. Refrigerate.
