Ingredients
- 4 T paparika
- 2 t cayenne
- 2 T chile powder
- 2 T cumin
- 1 t pepper
- 1/2 C olive oil
- 6 beef tenderloin steaks
- 6 thick slices Tuscan bread
- 2 med heirloom tomatoes, sliced
- 1/4 C crumbled Roquefort cheese
Preparation
Step 1
In small bowl, combine first 5 ingredients. Add oil & mix thoroughly. Rub steaks with marinade, cover & chill 12 hrs. Remove from fridge 1 hr. before grilling
Light grill to med hi. grill steaks 4-6 min per side for Med. rare.
Arrange tomato slices over grilled bread. Drizzle with olive oil & sprinkle with salt & pepper.
While steaks are still hot, crumble Roquefort over tomatoes. Slice steak & arrange over tomatoes & serve.
