Turkey & Black Bean Burritos

Ingredients

  • 1 T canola oil
  • 1 lb. ground turkey
  • 1 cup canned black beans, rinsed and drained
  • 1 cup finely chopped red pepper
  • 1/2 cup finely chopped red onion
  • 1/4 cup barbecue sauce
  • 4 tsp. fresh lime juice
  • 1 tsp. chili powder
  • 1 tsp. ground cumin
  • salt
  • 4 (12 inch) whole wheat toritllas
  • 1 c mixed greens
  • 2 oz. low fat cheddar cheese shredded (1/2 cup)

Preparation

Step 1

In 12 inch skillet heat oilon med. until hot. Add turkey and cook 7 until browned.

Add beans, pepper, onion, barbecue sauce, lime juice, chile powder, cumin, 1/4 tsp. salt - cook 5 to 7 minutes

To serve, place 1 tortilla on each plate. Divide turkey mixture evenly among tortillas; top with greens and chees. Roll tightly and serve with hot sauce.
