Candy Stripe Beet and Carrot Slaw

Chioggia beets won't bleed. Available in finer super and farmers markets

Ingredients

• 1/4 cup Greek yogurt
• 1 tsp. orange zest
• 3 tbsp. orange juice
• 1 tbsp. lemon juice
• 1 tbsp. chopped fresh dill
• 5 2" diameter beets, julienned
• 1 medium carrot julienned
• Kosher S & P

Preparation

Step 1

Whisk yogurt, orange juice, zest, lemon juice and dill in a bowl. Add beets and carrots and toss to combine. S & P to taste
