Ingredients
- Crust
- ~~~~~
- 2 c all-purpose flour
- 2/3 c confectioners' sugar
- 1 c butter, softened
- Topping
- ~~~~~~~
- 1-1/2 tsp salt
- 1/2 c all-purpose flour
- 4 eggs, beaten
- 3 c white sugar (I used only 2 cups)
- 4-1/2 c chopped fresh rhubarb
Preparation
Step 1
1. Preheat oven to 350 F.
2. In a medium bowl, mix together crust ingredients until it forms a dough, or at least the butter is in small crumbs. Press into the bottom of a 9x13" baking dish. Bake 10 min.
3. While this bakes, whisk together the topping ingredients in a large bowl, adding the rhubarb in after everything else is combined. Stir to coat. Spread evenly over the baked crust.
4. Bake for another 35 min. or until rhubarb is tender. Cool and cut into squares to serve.
