Veal Parmigiana

Ingredients

  • 1 lb veal scaloppini
  • 2 eggs,beaten
  • 1 c Italan seasoned dry bread crumbs
  • 1/2 c olive oil
  • Tomato sauce ( see recipe below)
  • 8 oz mozzarella cheese,sliced
  • 1/4 c grated parmesan cheese

Preparation

Step 1

Preheat oven to 350 F
Wipe veal with damp paper towels
Dip in egg,the bread crumbs,coating lightly
In a large skillet heat about 1/4 c oil
Add veal slices, a few at a time and cook until golden brown (about 2-3 min per side) Add more oil as needed
Place veal in a 10 x 6 1/2 x 2" baking dish to cover bottom in a single layer
Add half the tomato sauce and half the mozzarella and parmesan cheese
Repeat the layers ending with parmesan cheese
Cover baking dish with foil
Bake 30 min until bubbly
Makes 4-6 servings
